1. Oatmeal:

Oatmeal

Ingredients:

  • 1 cup oats
  • 2 cups of water
  • Salt taste
  • ½ tsp. cinnamon powder
  • ¼ cup raisins
  • ¼ cup almond (sliced)
  • ¼ cup cashew
  • 1 cup low-fat milk or almond milk

Instructions:

  • Boil the water and salt (as preferred) in a saucepan.
  • Turn the flame to low and add the oats.
  • Cook for about 5 minutes and regularly mix so that the oats will not clump together.
  • Add cinnamon powder remix it.
  • Then add the raisins, almonds, and cashews.
  • Cover and turn off the heat.
  • Let it sit for about 5 minutes.
  • Serve with milk and sweetener.
  • Add fruits of your choice if you want.

2. Khichdi:

Khichdi

Ingredients:

  • ½ cup moong
  • ½ cup of rice
  • ½ tsp. ghee or oil
  • ¾ tsp. cumin/jeera
  • One small or medium-sized onion
  • One medium tomato
  • One chopped green chilli
  • ½ inch chopped ginger
  • ¼ tsp. turmeric powder
  • One pinch asafetida/Hing
  • 3½ cups water
  • Salt to taste

Instructions:

  • Rinse the moong and the rice together and then soak them for 30-45 minutes in water.
  • Drain the rice and moong and keep them aside.
  • In a pressure cooker, heat oil or ghee then add jeera.
  • Add chopped onions when jeera starts to crackle.
  • Sauté the onions until transparent.
  • Add chopped tomatoes after the onions turn transparent.
  • Then add chopped ginger and 1-2 chopped green chillies and stir.
  • Add turmeric powder and a pinch of Hing.
  • Sauté till the tomatoes turn soft.
  • Add the drained rice and moong to the pressure cooker.
  • Stir for 1-2 minutes then add water.
  • Add salt to taste then stir well.
  • Close the pressure cooker’s lid and cook it on high flame for 6-8 whistles.
  • Serve the khichdi hot. You can top it off with ghee or garnish with coriander leaves if you want.

3. Omelet:

Omelet

Ingredients:

  • Two eggs (whole or whites as per your choice)
  • ½ small sized onion
  • ½ medium-sized tomato
  • Coriander leaves
  • One green chilli
  • ¼ tsp. turmeric
  • Salt to taste
  • Butter or oil

Instructions:

  • Crack two eggs in a bowl.
  • Add chopped onions, tomatoes, green chillies, and coriander.
  • Then add turmeric and salt to taste.
  • Beat/whisk the mixture until it’s frothy.
  • Add butter or oil to a pan and let it heat.
  • Once the butter or oil is hot, put the egg mixture in the pan.
  • Cook the egg for 2-3 minutes then flip it and cook the other side for another 2-3 minutes.
  • Serve hot.

4. Yoghurt bowl:

Yoghurt Bowl

Ingredients: 

  • 1 cup plain/unsweetened yoghurt
  • Sweetener (optional)
  • ¼ cup almonds
  • ¼ cup raisins
  • ¼ cashews
  • One banana
  • ¼ cup blueberries or any kind of berries of your choice

Instructions:

  • Add one cup of plain/unsweetened yoghurt to a medium-large sized bowl.
  • Add sweetener to the yoghurt and mix it (optional).
  • Add almonds, raisins, and cashews.
  • Add one chopped/sliced banana and ¼ of blueberries or any berries of your choice to the mixture.
  • Your yoghurt bowl is ready to eat.

5. Mix dal tadka:

Mix Dal Tadka

Ingredients:

  • ¼ cup toor dal
  • ¼ cup chana dal
  • ¼ cup moong dal
  • ¼ cup masoor dal
  • 3 cups of water

For tadka:

  • Oil or ghee
  • Bay leaf
  • One green chilli
  • ½ tsp. jeera
  • One pinch Hing
  • 1 tsp. ginger garlic paste
  • One small onion
  • One medium tomato
  • ¼ tsp. Turmeric
  • ¼ tsp. garam masala
  • Salt to taste

Instruction:

  • Rinse and soak all the dal for 10 minutes.
  • Put the dal mixture and water in a pressure cooker and cook it for 5-6 whistles.

Tadka:

  • Heat oil or ghee in a pan.
  • Add a bay leaf, slit green chilli, jeera and Hing.
  • When the jeera crackles, add ginger garlic paste.
  • Once the ginger garlic paste cooks add finely chopped onions.
  • When the onions turn golden brown add finely chopped tomatoes.
  • Once the tomatoes soften add turmeric powder, garam masala and salt then stir for 1-2 minutes.
  • Add the cooked dal mixture and stir for 1 minute.
  • Serve hot with roti, rice, or by itself.

6. Vegetable soup:

Vegetable Soup

Ingredients:

  • Oil or butter
  • Three garlic cloves
  • ½ inch ginger
  • ½ potato
  • ½ carrot
  • ½ onion
  • 20gm spring onion
  • 20gm cabbage
  • 20gm green peas
  • 20gm sweet corn
  • 3½ cups vegetable stock or water
  • Black pepper
  • Salt
  • ½ tsp. mixed herbs
  • 1 tsp. corn starch
  • ¼ cup of water

Instructions:

  • Heat butter or oil in a saucepan.
  • Add grated ginger and garlic, stir for 1-2 minutes.
  • Add finely chopped vegetables followed by vegetable stock or water and salt.
  • Cover with a lid and boil it for 5-6 minutes until the vegetables cook.
  • To make the thickener take ¼ cup of water in a bowl, add corn starch and mix it to make a slurry.
  • Then slowly pour the corn slurry while stirring the soup.
  • Turn off the flame and add black pepper and mixed herbs.
  • Serve hot.

7. Paneer tikka:

Paneer Tikka

Ingredients:

  • 100gm paneer
  • ½ cup yoghurt
  • ¼ tsp. Turmeric
  • ¼ tsp. garam masala
  • ¼ tsp. Chilli powder
  • ¼ tsp. Cumin powder
  • ½ tsp. ginger garlic paste
  • Salt to taste
  • 2 tsp. Oil or ghee

Instructions:

  • Pour ½ a cup of yoghurt in a bowl.
  • Add turmeric, garam masala, chilli powder, cumin powder, ginger-garlic paste, and salt to the yoghurt and mix them thoroughly.
  • Add diced paneer to mixtures and coat the paneer cubes evenly.
  • Marinate the paneer in the yoghurt mixture for 30 minutes.
  • Heat oil or ghee in a pan then put the marinated paneer cubes one by one (you can use a skewer).
  • Flip the paneer cubes on all sides every 2 minutes to ensure that each side is perfectly golden brown.
  • Serve hot with any kind of sauce or chutney of your preference.

8. Vegetable upma:

Vegetable Upma

Ingredients:

  • 1 cup suji
  • One onion
  • ½ potato
  • ½ carrot
  • ¼ cup beans
  • ¼ cup green peas
  • 1-2 green chillies
  • 4-5 curry leaves
  • ½ inch ginger
  • 1 tsp. urad dal
  • ¼ tsp. mustard seeds
  • 3 cups of water
  • Oil or ghee
  • Salt to taste

Instructions:

  • Dry roast suji in a pan for 5-10 minutes until it turns light brown once it’s done, transfer it to a bowl.
  • Heat oil or ghee in the same pan and add the mustard seed, chopped green chillies, curry leaves, and urad dal.
  • Once the dal turns golden brown and the mustard crackles add the chopped onions and grated ginger, fry it until the onions are golden brown.
  • Add all the chopped vegetables and peas, mix well and add water.
  • Heat oil it for 5 minutes.
  • Add the roasted suji and salt while stirring the mixture to avoid lumps.
  • Cook it for another 5 minutes.
  • Serve hot.

9. Mashed potato sandwich:

Mashed Potato Sandwich

Ingredients:

  • One medium boiled potato
  • Two slices of brown bread or white bread
  • ½ onion
  • Coriander leaves
  • ¼ tsp. cumin powder
  • ¼ tsp chilli powder
  • 1-2 pinch chaat masala
  • Salt
  • 2 cups of water
  • Oil or butter

Instructions:

  • Take one boiled potato and mash it.
  • Add ½ chopped onion, coriander leaves, cumin powder, chilli powder, chaat masala, and salt.
  • Mix it thoroughly.
  • Spread the mixture evenly on a slice of bread and cover it with another slice of bread.
  • Heat 1 tsp. Of oil or butter in a pan.
  • Put the sandwich in the pan and toast it evenly on both sides for 1-2 minutes until each side is golden brown.
  • Cut the sandwich diagonally and serve.

10. Chickpeas salad:

Chickpeas Salad

Ingredients:

  • ½ cup soaked and boiled chickpeas
  • One small cucumber
  • One small onion
  • One small tomato
  • One small carrot
  • Coriander leaves
  • ¼ tsp. chilli flake
  • ½ a slice of lemon
  • Salt to taste

Instructions:

  • Take the boiled chickpeas and finely chopped cucumber, onion, carrot, tomato, and coriander leaves and mix them.
  • For the seasoning squeeze ½ a lemon, add chilli flakes, and salt to taste.
  • Mix it a serve

11. Besan chilla:

Besan Chilla

Ingredients:

  • 1 cup gram flour/besan
  • ½ small onion
  • ½ small tomato
  • ½ capsicum
  • ½ carrot
  • ¼ tsp. turmeric
  • ¼ tsp. cumin powder
  • 1-2 green chilli
  • Salt to taste
  • ½ cup of water
  • 1 tsp. oil

Instructions:

  • Take gram flour/besan in a bowl.
  • Add all the finely chopped vegetables followed by 1 cup of water.
  • Then add finely chopped green chillies, turmeric, cumin powder, and salt.
  • Give it a thorough mix.
  • Heat the oil in a pan.
  • Pour half of the mixture and spread it evenly.
  • Cover the lid and cook it for 2-3 minutes until that side is golden brown.
  • Remove the lid and flip the chilla cover it and cook it for another 2 minutes

Serve hot with your preferred sauce, pickle, or chutney.

12. Poha:

Poha

Ingredients:

  • 1 cup poha
  • 1 cup of water
  • ¼ cup roasted peanuts or cashew nuts
  • ¼ tsp. cumin seeds
  • ½ tsp. mustard seeds
  • 4-5 curry leaves
  • 1-2 green chillies
  • ¼ tsp. turmeric
  • Salt to taste
  • 1-2 pinch sugar
  • Oil or ghee

Instructions:

  • Take 1 cup of poha in a bowl and 1 cup of water to it.
  • Soak the poha for 5 minutes and strain the water.
  • Heat oil or ghee in a pan.
  • Add cumin seeds, mustard seeds, slit green chillies, and curry leaves.
  • Once the seeds crackles add roasted peanuts or cashew nuts, poha, turmeric, salt, and a pinch of sugar.
  • Fry of 2-3 minutes.
  • Serve hot.

13. Chicken rice noodles:

Chicken Rice Noodles

Ingredients:

  • 350gm rice noodles
  • 4 cups of water
  • Two medium boneless chicken
  • 3 tsp. oil
  • One capsicum
  • ¼ cup of corn
  • 100gm mushroom
  • 1-inch ginger
  • ½ cup of chicken broth or water
  • 2 tsp. soy sauce
  • 2 tsp. tomato sauce
  • Black pepper
  • Salt to taste

Instructions:

  • Pour water into a saucepan followed by salt and rice noodles.
  • Boil it for 2-4 minutes.
  • Heat oil in a pan.
  • Add grated ginger.
  • Add chopped boneless chicken followed by salt and pepper.
  • Fry it for 3-5 minutes.
  • Add chopped capsicum, mushroom, and corn followed by soy sauce and tomato sauce.
  • Sauté for 3 minutes
  • Add the boiled rice noodles and chicken broth or water.
  • Sauté for 2 minutes.
  • Serve hot.

14. Baby Corn Delight:

Baby Corn Delight

Ingredients:

  • 200gm baby corn
  • 1-2 green chilli
  • ½ inch ginger
  • 2-3 cloves garlic
  • 2 tsp. Soy sauce
  • 2 tsp tomato-chilli sauce
  • 1tsp cornflour
  • ½ capsicum
  • 1 tsp. Oil
  • Salt and pepper to taste

Instruction:

  • Mix soy sauce, tomato sauce, cornflour, and 2 tsp. Water in a bowl.
  • Keed the mixture aside and heat oil in a pan and add baby corns.
  • Sauté on high flame for 5 minutes.
  • Add chopped green chillies, ginger, and garlic.
  • Sauté again for 3 minutes.
  • Add the sauce mixture mix till baby corns are evenly coated.
  • Add chopped capsicum followed by salt and pepper.
  • Fry it for 1-2 minutes.
  • Serve hot.

15. Turkey Carrot Mushroom Dumplings:

Turkey Carrot Mushroom DumplingsIngredients:

  • 1 cup carrot
  • 200gm ground turkey
  • ½ cup mushrooms finely chopped
  • 2 tsp. soy sauce
  • 1 tsp. rice wine
  • 1 tsp. Sesame oil
  • ½ tsp. onion powder
  • Salt to taste
  • 2 tsp. corn starch
  • 30 dumpling wrappers

Instructions: 

  • Mix boiled carrots, turkey, and mushrooms followed by soy sauce, rice wine, sesame oil, salt, and corn starch in a bowl.
  • Take a dumpling wrapper, fill it with the mixture and seal it.
  • Preheat the steamer and place the dumplings.
  • Steam it for 15 minutes.
  • Serve hot.
